Blueberry Goodness








The blueberries are in which means I just may turn into a blueberry myself (insert images from the little girl on Charlie Wonka & the Chocolate Factory that blew up into a blueberry. ha) Last night I decided to make these delicious blueberry cookies. If you like Blueberry muffins (of just blueberries in general) these cookies will be right up your alley! The original recipe actually calls for "frozen" blueberries, thawed and drained so if you want to be a Communist, you can use frozen blueberries but please don't tell me you did or we can't be friends anymore. ha! Kidding of course.

Almond Blueberry Cookies

2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 stick (1/2 cup) unsalted butter
1 cup sugar
1 egg yolk
1/3 cup whole milk
1 tsp almond extract
2 tsp lemon zest (about 1 lemon)
1/2 cup chopped almonds (toasted)
1 cup fresh blueberries (add more if you are feeling frisky)

Combine flour, baking powder and salt in a medium bowl
In another medium bowl, cream the butter & sugar together using a hand mixer
Add the egg and beat to incorporate
Add milk, almond extract and lemon zest
Stir the dry ingredients into the wet ingredients
Fold in the almonds and the blueberries
Chill the dough in the refrigerator for 30 minutes
Preheat the oven to 375
Using a small spoon, dollop mix onto cookie sheets (parchment paper makes clean-up a breeze)
Bake until golden brown, about 15 minutes

So apparently blueberries are high in Vitamin K (which thins your blood) and my levels were really high on Monday...whoops?! Probably because I have made two blueberry pound cakes and keep eating the delicious little berries!

Can i get some more tomorrow? ha!
